Basic Potato Recipe

Last week we were surprised by Miss Stone. It was part of our writing group. We had to make a dish but it had to have potato in it. All the boys in our group all joined and made a group. We wanted to make Potaco. It's a combination of Potato and Taco. It was really tasty. Each group made their own dish.
Here's a basic recipe on how to make Our Very Own POTACO!:
Basic Potato recipe

Ingredients:
  • One large potato
  • 1 tablespoon olive oil
  • 1 tablespoon of butter, softened
  • 1 tablespoon of milk
  • ¼ cup grated cheddar cheese
  • salt and pepper
  • Sour cream 1 tea spoon each
  • 50 grams of mince (pre made)

Instructions:
  1. Rub potatoes with olive oil, sprinkle with salt and pepper and poke a few times with a fork.
  2. Microwave it for about 10 minutes (5 minutes on each side)  or until a knife slides easily into the center.
  3. Cool for 10 minutes
  4. Cut potatoes in half and scoop out the center leaving about ¼ inch around the sides.
  5. Mash potatoes, butter and milk together.
  6. Stir in half the cheese, the mince and sour cream.
  7. Fill potato cups with the mash.
  8. Sprinkle remaining cheese on top and place under the grill until the cheese has melted.

To make the mince filling, heat the olive oil in a heavy-based saucepan over medium-high heat and cook the onion for 5 minutes, or until translucent. Add the mince and cook for 4-5 minutes, breaking the meat up with a wooden spoon. Add the tomato paste and water and season to taste with chilli, salt and pepper. Stir the mixture well and bring to the boil. Reduce the heat to low and cook at a gentle simmer for 20 minutes.
